Pure Energy Kale and Goat Cheese Salad

Ingredients:

  • kale 100 g
  • goat cheese 60 g
  • egg1 med. size
  • pure olive oil – 1 tbsp
  • tomatoes 1 med. size
  • red onion slice
  • barley 25 g
  • salt and pepper

Directions:

  • Cook the barley (relative: 1/4 cup of barley to 1/2 cup of water),
  • in the same time, cook hard-boiled egg
  • when egg and barley are getting done, cut the kale, tomato, onion and goat cheese and place them in a dish, add salt and pepper.
  • add hard-boiled egg and barley
  • sprinkle with olive oil
